Marinating chicken with beer is an inventive way to lock juices in and keep the meat tender. Here’s a fun recipe with an Asian twist.

Harbin 24-Carat Lemongrass Chicken

1 tsp. toasted sesame oil
1 lb. chicken breasts, cut into strips
1 stalk lemongrass, cut diagonally
2 cloves garlic, minced
1 tbsp. fresh ginger, minced
2 large carrots, diced
1 cup Harbin beer
1 kaffir lime leaf
1 lime, juiced
1 cup coconut milk
Sea salt and pepper, to taste
½ cup fresh cilantro, chopped

Heat sesame oil in a large sauté pan over medium high heat. Add chicken strips to oil and sauté for 2-3 minutes. Add lemongrass, garlic, ginger and carrots to the chicken, and simmer for another 2-3 minutes. Add Harbin beer, lime juice and kaffir lime leaf to mixture and let reduce by half. Add coconut milk and reduce for another 3-4 minutes. Season with sea salt and pepper; garnish with fresh cilantro and serve.
